I have some really yummy recipes to share with you this week! The first one is one that I found years ago for fruit salsa. With warmer weather looming, this is such a fun and tasty treat or a lighter and healthier alternative for dessert! The only down side about this particular recipe is that it is pretty time consuming to make. I only make it on special occasions, but each time that I do, it goes quickly and is accompanied with many compliments. I learned the hard way that you need to chop the fruit by hand instead of using a food processor to try and cut back on time or you will end up with a big runny mess.

Tasty Tuesday | Chicken Enchiladas and Lime Slush

Lately I have been going through a phase of really loving some good Mexican food. I decided to look for a fairly easy recipe that would use pretty basic ingredients that I keep stocked in my cupboards, wouldn’t take long to prepare and of course the family needs to love it. So this is what I found. I also LOVE this recipe because of the fact that it makes more than enough for 2 meals for our family. One for now and one to put in the freezer for later.

Happy Mothers Day

Happy Mothers Day to all of my sweet mommy friends and readers. I hope that you all had a great day spent in the company of loved ones.

I enjoyed getting to spend some time with some of our family and especially my wonderful husband and of course the 2 precious reasons that I celebrate this special day.

We headed out for lunch after church this morning with Jay’s parents, brother and his family and my brother Matthew and grandparents. Unfortunately, it wasn’t the best experience, actually it was TERRIBLE. Needless to say, we will not be going back to that restaurant again. As my hubby said, two thumbs way down! Hahaha (more…)

Spring Happenings

What a busy few weeks it has been! Between all the nice weather that we have been enjoying (up until yesterday that is) and preparing to host a baby shower for a very special friend, I haven’t had much time for the computer. So what better than to show you what I have been working on?

I ended up going with a purple and green theme with a few touches of giraffe print, working off of what will be in McKenna’s nursery.

I made this banner with some of the left over pom-poms. The B-A-B-Y circles I made from left over scrapbook that I had stored up. (more…)

Tasty Tuesday | Meaty Manicotti

Recipe: Meaty Manicotti

Ingredients

  • 14 manicotti shells
  • 1 lb. bulk Italian sausage
  • 3/4 lb. ground beef
  • 2 garlic cloves, minced
  • 2 c. shredded mozzarella cheese
  • 3 oz. cream cheese, cubed
  • 1/4 t. salt
  • 4 c. meatless spaghetti sauce
  • 1/4 c. grated Parmesan cheese

Instructions

  1. Cook manicotti shells according to package directions.
  2. Meanwhile, in a large skillet, cook the sausage, beef and garlic over medium heat until meat is no longer pink; drain Remove from the heat. Cool for 10 minutes.
  3. Drain shells and rinse in cold water.
  4. Stir the mozzarella, cream cheese and salt into meat mixture.
  5. Spread 2 c. of the spaghetti sauce into a greased 9×13 baking dish.
  6. Stuff each shell with about a 1/4 cup meat mixture; arrange over sauce.
  7. Pour the remaining sauce over top and sprinkle with the Parmesan cheese.
  8. Cover; bake at 350 for 40 minutes.
  9. Uncover; bake 5-10 minutes more or until bubbly and heated through.
