Tisk, Tisk, Tisk
I have been such a lazy blogger lately. Shame on me. I guess that I have been too busy having fun and enjoying summer and didn’t realize how long it has been since I have tuned in. Needless to say, I have LOTS of pictures, news and chatting writing to catch up on with you all.
So where to begin???? I guess I will start with the most recent happenings and just work my way back a few weeks.
Not only are we celebrating Fathers Day this weekend, but our little family will be celebrating hubby/daddy’s birthday on Friday. Since we are going to have a super busy weekend, I surprised Jay with an early celebration date night here:
We have been told by a few of our friends that we needed to try The Melting Pot and so I thought that this would be the perfect excuse to do that! More than anything, the atmosphere was fun and relaxing. Perfect for a quiet evening without kids.
If you have never heard of The Melting Pot, the idea is fondue. We went and had all three courses (appetizer, main dish and dessert) and all three were very good but the dessert was definitely the highlight of the whole thing. Oh my word! I have never had anything so delicious in all my life! We chose the “Original” which was milk chocolate and crunchy peanut butter. I go weak in the knees for that combination anyhow, but then you take a plate full of goodies such as strawberries, bananas, cheesecake and rice krispie treats and dunk it in the gooey, chocolaty, goodness and you have a little slice of heaven right there!
I think the next time we will just forgo dinner and head right for the dessert (and save a little money along the way).
After dinner, we headed to the mall to walk around a bit but ended up just going to Borders to nose around and sit and talk for a while before we ended up heading home.
I am so thankful when we have the opportunity to sneak away for a date night and be just the two of us for a few hours. This date night was extra special to me as we were out to celebrate Jay’s life. I am so thankful for his life and that God has blessed me with the privilege of being his wife. He is such a blessing to our family as a great husband, father, provider and leader.
Well, since it is Tuesday, I suppose that I might share a recipe with you all and I think that I will continue on with the birthday theme I have going on in this post. I love this recipe for so many reasons but mostly because it is cheap and easy.
Recipe: J-ello Poke Cake
Ingredients
- 1 pkg. white cake mix
- 1 c. boiling water
- 1 pkg. (4 serving size) J-ello of any flavor
- 1/2 c. cold water
- 1 tub (8 oz.) whipped topping, thawed
Instructions
- Prepare and bake cake as directed on the box in a 9 x 13 cake pan.
- Cool in pan for 15 minutes.
- Poke cake with a fork or knife every 1/2 in.
- Stir boiling water into dry j-ello mix for 2 minutes or until dissolved. Stir in cold water; carefully pour over cake.
- Refrigerate for at least 3 hours.
- Spread whipped topping over cake and decorate with sprinkles if desired.
- Store leftovers in the fridge.

This makes the perfect dessert for hot summer days since it is chilled and has a light texture and flavor. Our personal favorites for this particular cake is to make it with orange or lime j-ello. Mmmmm! I hope that you get a chance to try it!
