Tasty Tuesday Recipe Swap | Casseroles

I hope that you all are ready to share some yummy casserole recipes! We are going to try something new for the next few weeks and swap some recipes. This weeks recipe is a casserole of some sort, either a main dish or side dish.

Recipe: Summer Squash and Zucchini Casserole
Ingredients
- 1 lb. Summer Squash (thickly sliced)
- 1 lb. zucchini (thickly sliced)
- 1/4 c. chopped onion
- 1 can (10.75 oz.) cream of chicken soup
- 1 c. sour cream
- 1 c. shredded carrots
- 1/4 c. butter
- 2 c. herb seasoned stove top stuffing
Instructions
- Cook squash with onion in boiling salt water for 5 to 10 minutes.
- Drain well.
- Combine soup and sour cream.
- Stir in shredded carrot.
- Fold in drained squash and onion.
- Melt butter; toss with stuffing mix.
- Spread half of the stuffing in a 12 x 8 x 2-inch baking dish (about 1 1/2 to 2-quart size). Spoon vegetable mixture on top. Sprinkle with remaining stuffing mixture. Bake at 350° until heated through, 25 to 30 minutes.
